Ramen Replaces Curry at Broadway Market

Tora Ramen took over the Biju’s Little Curry Shop stall last weekend.

There’s been a stall switcheroo at Broadway Market; curry is out and ramen is in.

Biju Thomas decided to close his Broadway Market Biju’s Little Curry Shop on October 7 to dedicate more time to his Tennyson Street location. (In August, Thomas announced he’d be closing his original Biju’s Little Curry Shop in RiNo, also to focus on the Tennyson curry shop, as well as a still-in-the-works Dallas outpost.)

“Five years in, I really want to refocus on our core business, update the menus and service model, and really showcase the work we do,” Thomas says of his plans for the Tennyson Street shop. “I really believe that we are uniquely positioned to be the category leader for our food…I wanted to reduce all the distractions, and not compete to be the cheapest. Instead, really elevate the food and customer experience and create something super special for our friends and neighbors.”

Biju’s is replaced by a ramen stall from a fellow Broadway Marketer. Tora Ramen, from Jesusio Silva, executive chef and co-owner of the food hall’s sushi and oyster bar, Misaki on Broadway, just started serving “traditional Japanese ramen, but with a twist.”

To start, the menu leans toward the traditional, with slurping options including bowls of pork belly-laced tonkotsu with squid ink and black garlic and yasai (vegetable) ramen with fried cauliflower and crispy chili oil in a mushroom broth, as well as 18-hour pork ribs, Japanese fried rice, and gyoza. In a press release, Silva said he hoped to incorporate the flavors of other cultures into his soup bowls in the future, like he did with a lamb posole ramen for a recent culinary competition.
