Corey Marshall’s grandpa died four months after Tivoli Brewing Company, one of Colorado’s first breweries, capped its tanks in 1969. “I think there was a direct connection between the two,” Marshall says, noting that Tivoli was the only brew his grandfather would drink. This month, Marshall revives the family tradition by opening a taproom and brewery inside the original Tivoli building (built in 1870, it’s now the Tivoli Student Union at the Auraria Campus). The former Molson Coors exec restored the brand in 2012, making beer with Tivoli’s last recipe from the 1960s. But without a facility, Marshall had to produce the suds at other local breweries. His new $7 million operation will give him the ability to churn out 15,000 barrels a year and will serve as a beer-making lab for students at Metropolitan State University of Denver. The attached taproom will pour Tivoli’s Helles Lager, Sigi’s Wild Horse Buck Beer, and Pass the Buck. All told, Marshall hopes to eventually create 45 varieties of Tivoli beer—at least one of which, we’re sure, would’ve passed Grandpa Marshall’s taste test.
