It might be called Naked Lunch, but it’s breakfast that has me stopping by the newest eatery at the Lofts at Peloton in Boulder. In particular, I’m talking about the warm, house-made biscuits and buttery brioche, both of which star in the build-your-own breakfast sandwiches (pictured). Layer the pastries with arugula, farm-fresh eggs, or smoky applewood bacon—or eschew the sandwich and simply slather on homemade jam and creamy Brie.
Where the four-month-old eatery needs to focus its attention is, ironically, lunch. Salads are hearty but sandwiches still need refining (in particular the Reuben and the banh mi). Still, I remain hopeful that the midday menu will go the way of breakfast and become a draw.

Tip: Several items cater to a variety of dietary needs: Look for vegan and gluten-free donuts, cashew cheese, and vegan chocolate-coated cookie dough balls.
