Denver’s dining scene is doing its best to eschew the weekend’s gloomy weather predictions. Banking that a sunny evening is hiding behind all the calls for rain, Stapleton’s The Berkshire,Â Uptown’s Marczyk‘s, andÂ Cherry Creek’sÂ Tambien are declaring the beginning of summer with evening grilling events.
Tonight, The Berkshire, a family-friendly restaurant known for pork dishes, hosts its first-ever pig roast. And across town, Marczyk’s rolls out its enormous grill to toss Niman beef patties over hot charcoal. The juicy burgers are then stuffed into a brioche roll. Sunday, Tambien pairs buckets of cold Mexican lagers with chili-rubbed chickens, lamb barbacoa, and baked beans.

Marczyk and Tambien’s grilling events run weekly throughout the summer, and The Berkshire’s roasts will occur monthly. So even if the sun doesn’t make it out this week, it will soon. In the meantime, you can start eating.
