Last Monday, a second outpost of Low Country Kitchen opened its doors in the former Vita space on Boulder Street in LoHi. The new location—husband-and-wife owners Brian and Katy Vaughn opened the original in Steamboat in 2014—features a similarly indulgent menu of Southern favorites. The Vaughns intend to embrace the neighborhood by giving their space a welcoming, family-friendly vibe. “Rather than being chef-driven or cocktail-driven, we really want to be hospitality-driven,” Katy says. “It’s already an amazing dining scene in the Lower Highlands, and we’re just hoping to add to that,” Brian adds.
The Vaughns gave the interior a complete overhaul to create a warmer, more rustic space, adding plenty of reclaimed wood and convivial string lights. They’re also planning updates for the patio area upstairs, including an ivy-covered wall, lounge seating, and an additional patio bar.

Brian crafted the concise food menu, which combines many favorites from the Steamboat location (including fried green tomatoes with avocado dressing, chicken and biscuits with Creole aïoli, and Mississippi catfish), with the addition of a few rotating, seasonally focused dishes; March’s menu features a barbecued Colorado lamb shoulder. Denver diners are sure to flock for the legendary fried chicken, which is crisp, tender, and not too greasy.
Brian has perfected the time-consuming dish, which involves brining the chicken for 24 hours, marinating it in seasoned buttermilk for 24 more, dredging it in a mixture of flour and cornmeal, and frying it until crisp and golden. During weekend brunch, which will begin sometime in the coming weeks, Low plans to offer a “bucket on bucket” deal: a bucket of the buttermilk-fried bird and an iced bucket holding a cold bottle of champagne. The price of the deal has yet to be determined.
For now, Low is serving dinner seven nights a week.
