When I stepped up to the counter at the soft opening of Biker Jim’s new Highlands Ranch location, I ordered my regular: Alaskan reindeer dog with the “classic treatment” of cream cheese and caramelized onions. But the guy with the gray ponytail standing beside me had his own opinion: “Nope.” Jim Pittenger (aka Biker Jim) vetoed my order and called out to the line cooks “wild boar with el Diablo.” If Alaskan reindeer stretches my culinary comfort zone, the wild boar with el Diablo kicked it out the door. But, I trusted Pittenger and he came through with the best—albeit first—wild boar brat topped with tomatillo green chile salsa, Sriracha-lime mayo, and bacon bits, I’ve had.
The second brick-and-mortar outpost for the gourmet dog shop officially opens today (the original sits on Larimer Street downtown). Biker Jim’s took over the former Bernie’s Hot Dog Co. space in what Pittenger calls, “pure luck” when the owners of Bernie’s decided to close. Pittenger transformed the orange and lime green decor into his signature exposed brick and concrete look, but not without a little hell raising. After a day spent cleaning and buffing the concrete floor, Pittenger had his motorcycle wielding friend roll the bike inside and burn some rubber, literally, onto the floor at 10 p.m. Needless to say, the guy who’d just spent a day cleaning wasn’t thrilled with he came back to wax the concrete in the morning.

Pittenger says he’s happy to bring another local business into Highlands Ranch. His exotic menu with rattlesnake, pheasant, and duck dogs stays the same and is accompanied by local favorites such as Elevation Ketchup and Harvest Moon Bakery. The shop with stay open until 8 p.m. Monday through Thursday, and 10 p.m. on the weekends.
Rumor alert: Apparently the Hell’s Angels motorcycle gang was supposed to make an appearance for the opening, but Sturgis got in the way.
