I’ve decided after years of dining that fresh tagliatelle is my favorite style of pasta. The long, flat egg noodles are wide enough to support heavier sauces, yet thin enough that the pasta doesn’t overwhelm.
My go-to spot for tagliatelle is Parisi Market and Deli, the family-owned trattoria in Denver’s Berkeley neighborhood. Parisi offers several preparations for the homemade pasta, including with Bolognese, marinara, or mushroom-cream sauce. But my recent favorite is the tagliatelle gamberetti.

The dish blends pasta ribbons with tender prawns, slivers of zucchini, and fragrant saffron, before folding it all together with a good amount of cream. When paired with a glass of Barbera, the meal feels oh-so-Italian.
Tip: Experience slightly more refined Tuscan cuisine in a fine-dining setting by heading downstairs from Parisi to Firenze a Tavola, open for dinner Wednesday through Saturday.
