Socorro’s 19 E. Bayaud St., 303-777-8226. There’s nothing fancy about Socorro’s tiny space, but the bar stools are usually filled with hungry diners guzzling icy agua frescas and devouring three-bite tacos. There’s more to the menu—stacked tortas, smothered burritos, fiery green chile—but we go for the street tacos. Three-inch disks of fresh corn tortillas come stuffed with everything from tilapia to eggs with chorizo. Our favorite fillings are the tender al pastor (marinated pork) and the slightly smoky beef barbacoa. Douse each bite in the tomatillo-tart salsa, and round out the meal by sipping on a slightly fizzy hibiscus agua fresca.
