
How To: Old Tom’s Apple
This sophisticated winter cocktail from barman Sean Kenyon of Williams & Graham is a cinch to make.
•1. For honey syrup, add 1 part honey to 1 part hot water by volume. (For each drink, you’ll need 1/8 ounce honey added to 1/8 ounce water, but it makes sense to make the syrup in bulk.) Stir.
2. Combine 1½ ounces Spring44 Old Tom Gin, ½ ounce Leopold Bros. New York Apple Whiskey, ¼ ounce honey syrup, ¾ ounce fresh lemon juice, 1 dash angostura bitters, and 1 egg white in a shaker.
3. Shake vigorously with ice and strain into a chilled coupe. Grate nutmeg over top to finish.
