These simple ingredients need no adornment, and yet they each possess the capacity to punch up nearly any dish. To that list I add quinoa, the ancient grain of the Incas. Nutty and wholesome, this superfood can be eaten straight up or showcased in a dish like Organixx’s salad niçoise. Standing in for traditional tuna, quinoa combines with lemon-caper vinaigrette, roasted new potatoes, hard-boiled egg, asparagus, and kalamata olives for a robust, satisfying lunch. If that’s simply too healthy, downsize to a small salad and pair it with half the grilled cheese sandwich—a gooey getup of provolone, feta, bacon, and grilled wild mushrooms.
