Larkburger, 2525 Arapahoe Ave., Boulder, 303-444-1487 and 105 Edwards Village Blvd., Edwards, 970-926-9336 We were some of the very first customers when Larkburger, the eco-minded burger joint from Vail chef Thomas Salamunovich, opened its Boulder outpost. Since then, we’ve been back several times for the stacked sandwiches, five-dollar shakes, and addictive truffle and Parmesan fries. Larkburger reimagines fast food by doling out premium eats made from first-rate ingredients, but nothing underscores the eatery’s fresh thinking more than the tuna burger’s just-seared slab of ahi, silky wasabi-ginger sauce, and crisp lettuce, tomato, and onion. The combination is light and satisfying, and a far cry from typical fast food.
