1. Warm the tortilla in the microwave for 10 to 15 seconds. Pile on the fillings. Keep them in the center with rice on the bottom so the tortilla doesn’t get soggy.

2. Firmly fold the side of the tortilla closest to you over the filling and tightly tuck it under. Pull the left side, fold it up snugly, and repeat with the right side, creating a pouch that opens away from you.

3. Using your pinky fingers to keep the sides in place, roll the freshly folded pocket away from you with a smooth left-right rhythm. Move your fingers out of the way on the final roll.
